How Did Pandemama Begin?

Born in 1977 in Manila, Evangeline Reynosa Wainhouse spent much of her career in the hospitality industry as a pastry chef. In the 2000s and 2010s, she was co-owner of La Patisserie in Los Belones, Spain — a French-inspired luxury bakery and café serving specialty cakes, breads, teas and coffees. In 2025, the passion for baking returned, this time with a longing for the flavours of home. The Filipino baked goods Evangeline set out to make were a fond reminder of her childhood in Manila, where she grew up before arriving in Europe in her early twenties. Her best-selling pandesal — warm, soft and comforting — quickly became a hit with the local Filipino community and beyond. Word spread fast. Door-to-door deliveries soon became overwhelming, which led Pandemama to expand into an online store, so that anyone across the UK can now enjoy freshly baked Filipino bread at their door.

What Does Pandemama Mean?

Pandemama is a blend of pandesal — the beloved Filipino bread roll — and mama, honouring the mother who founded this bakery. Say it slowly and you'll find it: pan de mama. Bread from mum.

Fun fact: it was actually Evangeline's youngest son, Steven — just 12 years old at the time — who came up with the name. He still demands his royalty fees.

What Filipino Breads Do We Bake?

We bake a wide variety of Filipino breads, from traditional pandesal (including variations with cheese fillings and malunggay) to pan de coco and our popular Spanish bread, with its buttery, lightly sweetened filling that is utterly irresistible at breakfast. Then there's ensaymada — a large, muffin-sized sweetened bread finished with a generous sprinkle of cheese on top. If it's your first time trying Filipino bread, we recommend starting with classic pandesal. Small, bap-shaped, light and fluffy, finished with breadcrumbs and best eaten warm — it pairs beautifully with cheese, peanut butter, butter, egg, or whatever filling you love. Perfect for breakfast or as a snack any time of day. All of our Filipino breads are made from quality staple ingredients — flour, water, salt, yeast — with additions like malunggay, ube and cheese giving each variety its own character.
